    Allergy or Intolerance... What's the difference?  
A food allergy causes an immune system response while an
intolerance causes a physiological response due to an inability to
digest the item.  The common denominator... strict avoidance!  
From a food-service point of view both conditions are serious and
should be treated as such.  Make sure your staff knows how to
work with these customers for your safety as well as theirs.
